A quick zucchini‑and‑meatball pasta is a warm bowl of tender pasta tossed with browned meatballs, soft sautéed zucchini, and a light tomato‑garlic sauce. It’s fresh, hearty, and comes together fast.

Ingredients
  • 1 tablespoon olive oil
  • 2 zucchinis sliced - 1 green, 1 yellow
  • 1 can diced tomatoes with basil, garlic, and oregano
  • 6 turkey meatballs or 1 cup turkey sausage crumbles
  • 1 tablespoon Italian seasoning
  • 1 cup rigatoni pasta
  • Shredded mozzarella cheese

Directions
  1. Cook pasta according to package directions
  2. Sauté zucchini in olive oil. Add diced tomatoes and juice. Stir well.
  3. Add meatballs or turkey sausage crumbles and Italian seasoning.
  4. Simmer until the meat is heated through and the liquid has evaporated.
  5. Stir in 2 tablespoons of olive oil.
  6. Divide cooked pasta between two bowls.
  7. Top with turkey and vegetables. Top with a sprinkle of cheese.
